"Johanne Anastasia Stoffersen (1994)’s practice accentuates the political and social histories of food, illuminating the representations and rituals around cuisine as demonstrations of cultural identity, changing values, power, community, and class. Working with food and historical icons from the culinary world, her materials range from ceramics, food, sculpture, film, photography, text, and performance, to curating/catering elaborate events where the dinner party fuses with the logic of the theater and the exhibition, generating a gesamtkunstwerk, a gastronomical extravaganza that brings people together and develops over time. Key to her research is to understand the shifts in food and consumption habits in Denmark, where ‘tastes’ and values imported from abroad were historically used to ‘educate the masses’, and where culinary trends have cycled back and forth between the countryside and the city, the center and the periphery, the common populace and the elite."
